Potica

Potica - Slovenian Nut Bread

1/4 cup water                              1 T dry yeast
1/2 warm milk, (105-115)          1/3 cup sugar
1 tsp salt                                      1/2 cup unsalted room temp butter
2 eggs                                          4 cups flour

Dough:  Combine water, yeast, stir until disolved.  Add milk and sugar, let stand 5 minutes, until foamy.  add salt, butter, eggs and half the flour.  Beat until smooth.  Add remaining flour and mix until soft dough is formed.  Knead by hand about 10 minutes.  Place in greased bowl.  Cover and let rise about one hour.  

Filling:  Combine 3 cups chopped walnuts, 3/4 cup evaporated milk, 3/4 cup sugar in sauce pan.  Stir in 1/3 cup honey.  Bring to boil, stirring constantly, and let boil one minute.  Remove from heat and add 1/2 tsp vanilla.   (I like to add cinnamon and lots of white raisons.)  (plump up the raisons before baking with them, but make sure they a cold and NOT wet when adding to mixture). 

Assemble and Bake:  Do not punch dough down.  Stretch into rectangle about 20x70.  Trim to 18 by 68.  Spread filling over dough to about 1/2 inch of edge.  Roll into tight log, and shape into horse shoe, or cut in half and place in two 9 inch loaf pans.  Let rise until double.  Bake 350 for about 45 - 50 minutes or it is a nice golden brown and sounds alittle hollow when tapped, or smells done.
